Not much gets better than a slow cooked lamb shank!

It's true for most country folk that there is not much that is better than a slow cooked lamb shank!

Ingredients for two;

  • 2*lamb shanks
  • Half a sweet potato
  • 2* roma tomatos
  • 1 onion
  • 2*garlic gloves
  • 1 generous handful of fresh oregano
  • 400g crushed tomato can
  • Olive oil


Saute onion, garlic and oregano (reserve some for serving) in some olive oil, when onion is soft add lamb shanks. Cook until lamb shank has been browned, then transfer to the slow cooker. Add in the can of crushed tomatoes, diced sweet potato and fresh tomato, season with salt and pepper and place on low for 8 hours. Serve just on its own or with some mashed potato or sweet potato. 

This is super easy and delicious!!!
