- 1/4 cup arrowroot or cornflour
- 2 tsp ground cinnamon
- 1 granny smith apple, peeled and diced
- 1/4 cup chia seeds
- 1 cup water
- 1/2 cup rice malt syrup (or any other syrup/sweetener)
- 1 tbsp apple cider vinegar
- 1 cup pecans
Firstly turn you oven onto 180 degrees and prepare/grease a muffin tray for 12 muffins. Mix almond meal, arrowroot and cinnamon in a bowl, then throw in the apple and mix thoroughly. In a separate bowl mix chai seeds, water, apple cider vinegar and rice malt syrup (reserve a little to add to the top of the muffins), then pour into the dry ingredients and combine.
